No-Chai Masala Chai
First, we’ll prepare a no chai masala chai made only with Indian herbs
You can find all the ingredients you need to make it in your own kitchen
First, we’ll boil 1.5 cup of water in a pot
Keep the gas on a medium flame
We don’t have to boil the water for too long
In the time it takes for the water to boil, let’s grind our spices
We need 4 green cardamom, 1/2 inch piece of cinnamon, 2 cloves
2 black peppercorns, 1 star anise
If you don’t have star anise, you can use 1/2 tsp fennel seeds too
2. First we’ll grind all the spices using a mortar and pestle like this
Make sure you grind all the spices properly
so that the flavours in your tea can come out properly
When the water starts boiling, then along with the grounded spices,
we’ll add 1 tsp grated ginger too
then cover the lid and allow the tea to boil
Stop the gas for 2 mins
Don’t boil the tea for too long. Otherwise, it may turn out bitter
Ah! There’s a magic in the aroma of this tea itself
But the most fun and special part is still remaining
Now we’ll add 1/2 cup coconut milk to it
3. But always remember to add coconut milk only after you’ve switched off the gas

If you don’t have coconut milk, you can use almond milk instead
After adding milk, cover the pot for 5 mins
so that all the flavours of the spices blend well together
You don’t need to add coconut or almond milk to make this chai
Even without milk, this chai tastes great
If you’re not adding milk, then add more water to it in the beginning
Instead of 1/2 cup, add 2 cups water
4. Now just sieve it using a strainer and add jaggery to sweeten it as per your taste
When we have guests at home who ask us for chai,
we offer them this tea
And when we tell them it has no tea leaves, they always ask us for the recipe
They can’t believe it that without tea leaves, without milk, and without sugar,
we can make such a delicious tea

Lemongrass Herbal Tea
Now let’s move onto our next herbal tea
and that is lemongrass tea
I know the moment you hear lemongrass
you’ll think – “Oh! But where will we get it from? It’s not even available in India”
6. Where will I go to find it?
Actually, lemongrass can easily be grown in India
You can ask your gardener to get it for you or buy it from any nursery
or you can grow it in your kitchen, balcony, wherever you want
One plant only costs Rs. 50-100 and grows throughout the year
7. So come, first we’ll add 2 cups water to a pot and boil it
then we’ll take our lemongrass
To make tea, you don’t need the leaves, but the stem of the lemongrass
the base at the bottom
Take 2-3 inches of the stem and cut it like this
Now add it to boiling water and allow it to boil for 1 min on a low flame
In the time it takes for the lemongrass to boil,
we’ll grind our other spices too
Place a 2 inch cinnamon piece in a mortar and pestle, 6 green cardamom seeds
and a 1/2 inch piece of ginger
8. Grind them properly and add them to the water
Cover the lid and allow the water to boil for 3 mins
Whenever I make this tea, the whole kitchen is filled with lemongrass fragrance
Now just strain it and pour it in a cup
And add jaggery powder as per your taste
Don’t add too much jaggery. Otherwise, you won’t taste the flavour of lemongrass
For Satvic recipes, we use jaggery for sweetness
9. We never use sugar
I love the flavour of lemongrass in this tea
But you can use holy basil, curry leaves, mint leaves, or even rose leaves instead
Keep in mind that if you’re using curry leaves, don’t boil the water too much
Otherwise, it’ll become bitter
Many people in my family have switched their regular tea with lemongrass tea
And in just a few days, their tea addiction went away easily
Apple Cinnamon Tea
Oh! Our last and final herbal tea recipe is still left
Apple-cinnamon tea
You may be thinking – what kind of combination is this?
But just try it once!
To prepare it, take 2 medium sized red apples
Cut them into small pieces like this
Crush the cut apple pieces like this
Don’t crush them so much that they turn into juice. Just lightly crush them
Now take 2 cups water in a pot
Add the crushed apples, 2 cinnamon pieces, and 4 cloves to it
and place the pot on a medium flame
We have to boil them on a medium flame like this for 10 mins
so that all the flavours – the light sourness of the apples, sweetness of cinnamon,
and the pungent flavour of cloves can blend together well
After 10 mins, pour it in a cup through a strainer
Add jaggery powder as per your taste
and now our apple-cinnamon tea is ready
I know thinking of quitting tea sounds impossible to even imagine for you
but trust me, for 3 days, JUST 3 days
replace your usual tea with one of these herbal teas
